"Article 11. Socarrat and presentation. Optionally, during the last 2 minutes the heat may be raised to form the socarrat. The paella may be served in the pan or plated according to preference."

Burnt socarrat is the leading cause of rejection among diners unfamiliar with the dish. Making it optional increases the accessibility of the recipe.
