The session of the Committee on Gastronomy is called to order. Today we welcome Chef Ramon Expert to discuss the technical aspects of the reform bill.
Thank you, Madam Chair. As a chef with 30 years of experience, I can confirm that bomba rice has unique absorption properties. However, a good round-grain rice can yield acceptable results.
Regarding seafood, it is technically incompatible with the cooking times of chicken and rabbit. Mixing them compromises both textures.
Chef, but is it not true that millions of families already prepare paella with seafood?
They prepare rice with seafood, which is excellent. But technically it is not Valencian paella. The representative's bill at least proposes the designation 'mixed paella', which I find reasonable.
Exactly! The chef confirms our position. The committee report must reflect this technical distinction.
